Boats with out drives do not have sea strainers to block anything. My guess could be that some weeds got sucked in. Than for a moment the raw water pump lost suction and the temp went up. Keep in mind you need less water at lower RPMs. But its just a guess.

On boats, ABYC standard is that yellow is negative. Not knowing your boat, I would say that these switches light up. So you need to use a meter and find the load side of the switch.

Keep in mind that both Merc and Volvo are GM blocks. So you can find that part for less.

Looks like a vent. Ether for fuel or waste.

Sounds like fuel. In other words, what is common to both engines. I don't see two engines having the same problem at the same time. I could be wrong, but its the first thing I would look at.

You should still be under warranty, yes? So both engines are giving you the same RPM readings? Or is only one engine acting up?

Than most likely you have bad fuel. Take a portable fuel tank, a 3 or 6 gal one with new fuel. Than run the engine on that and see what happens.

It's not a bad thing to use a specific switch to turn on the NEMA network. More so when the boat is not in use. Other wise it could be a drain on the batteries depending on what is on the network.

Just a thought...... For a few more bucks, you can add another battery to the house bank. This could also aid in starting if your starting battery went bad or low.

The remotes are daisy chained by a NEMA2k network which makes it easier to wire. Plus most MDF (Simrad, Garmin to name a few) can be used as a remote too.

It does sound like you left a wire off. OR you put the 2 wires to the pump on the same terminal. If the pump was working before you touched it and not after. Most likely you did not blow a fuse unless you wired it backwards.
